After a lovely, long sleep in I made this healthy version on Saturday. They were delish! I found the recipe here http://www.skinnytaste.com/2010/09/banana-nut-pancakes.html added an extra half of a mashed banana into the batter, chopped the other half for topping along with toasted almonds and a drizzle of honey. Yum. What do you like to enjoy on the weekends?
