Best steak sandwich...

I've recently become mildly obsessed with Jamie Oliver and my griddle pan (which was purchased as per Jamie's recommendation.) I made his steak sandwich with a little twist on the weekend and it was very, very yummy. A heavy griddle pan is required.

Ingredients:
Two good quality steaks
Olive oil
Sea Salt
Herb du Provence
Watercress
Mushrooms (I used a mix)
Balsamic vinegar
Ciabatta

Put your griddle pan on high heat, drizzle olive oil over steaks and rub in so they are coated, put the dried herbs and sea salt on a plate and press your steaks into them on both sides to coat. Let steaks rest. Put dry mushrooms on hot pan and grill for approx 1 min on each side, they will be dry and have a smoky flavour. Remove your mushrooms and put your steaks on the pan, turn each minute for 3 to 4 mins (for med, rare.) Let your steaks rest and pop your ciabatta (sliced in half) on the pan. Push on the bread with with a heavy pan to toast it. Top toasted bread with steak, a handful of watercress and the mushrooms. Drizzle with a touch more olive oil and the balsamic. Enjoy.
